Settler''s Bread
Ingredients:
1/2 cup warm water
2 tbsp. yeast
2 1/2 cups whole-wheat flour
1/2 cup quick oats
1/2 cup wheat germ
2 tap. salt
2 bananas
1/4 cup butter or margarine
1 cup milk
1 cup small curd cottage cheese
1/4 cup honey
2 tbsp. molasses
2 eggs
3 to 4 cups white flour
Directions:
Dissolve yeast in warm water. In large bowl, combine the whole-wheat flour, oats, wheat germ, and salt, Set aside, In saucepan, heat together the butter, milk, cottage cheese, honey and molasses. Add to mashed banana and beat well. Add eggs and yeast mixture, blending well. Beat in the flour mixture and continue to stir in white flour until you have a fairly stiff dough. Turn out on floured board and knead ''til your forehead gets dewy. Cover and let rise. You can punch this down and knead as many times as you want, the more the better, but once Will suffice. When you''re out of zip, or time, or both, roll out and shape into loaves, place in greased loaf pans, and let rise again Bake at 350 degrees for 30 to 40 minutes.
When you have measured, stirred, kneaded, shaped and baked, and then pulled a big brown loaf from your oven and let the warm savory aroma drift through your abode; how easy it is to thank God for His bounty, and to offer it to your family with joy and quiet satisfaction!

The author feels very fortunate to have been raised in one of the most beautiful areas of the United States and close to the tiny town of Bonners Ferry, voted the most friendly in Idaho,
She and her husband have raised a family and are retired. She enjoys various hobbies including furniture restoration, sewing, writing and travel
She feels that a solid faith in God, a sense of humor, and a good mixing bowl have assisted her through many of the rough spots of life.It is also her firm belief that the strength of this beloved nation lies in the heart of our homes.
