Chicken Nuggets
1 pound chicken tenders cut into one inch pieces.
1/4 cup of Rice flour
1 egg
1/4 cup rice crumbs
1/4 teaspoon Lowry's seasoned salt
Pepper to taste
3 tablespoons Canola Oil
Place flour in one pan, break the egg into another pan and beat with a fork. Place the rice crumbs into a third pan. Add the salt and pepper to the flour and mix.
Preheat a ten inch skillet on medium heat and add the Canola oil heating until hot.
Dip the chicken pieces into the flour shaking off the excess, then dip into the beaten egg and then coat the chicken in the rice crumbs.
Add the coated chicken frying 5 to 7 minutes until a brown crust forms then turn carefully over. Cook an additional 5 minutes until brown. Drain on paper towels.
