Chops with Gravy and Biscuits
4 thin-cut pork chops
½ lb. bulk Italian sausage
3 tbs. flour
1 cup milk
2 tbs. marsala wine (or water)
your favorite biscuits
nonstick cooking spray
salt & pepper to taste
Preheat oven to 350 (or temperature required for biscuits). Season both sides of chops. Heat ovenproof skillet over medium-high heat, and spray with cooking spray. Brown chops on both sides about 3 minutes and place in oven at the same time you start your biscuits. In another skillet on medium heat, brown sausage; do not drain fat. Add flour and cook for 2-3 minutes. Slowly add milk and cook until it thickens. Stir in
Porterhouse Steak with Sautéed Mushrooms
1 large porterhouse steak, 2” thick
1 lb. sliced button mushrooms
3 tbs. butter
1 cup rich beef stock
3 tbs. cream sherry or brandy
1 clove minced garlic
2 tbs. chopped fresh parsley
1 tsp. butter
salt & pepper to taste
Preheat griddle or grill to high heat. Season meat on both sides as desired. Place meat on hot grill for 3 minutes (rare), 5 minutes (medium rare), turn 90 degrees and cook 3 additional minutes, or desired doneness.
