INTRODUCTION
I am writing this book to help all those people who don’t have time to put “The Perfect” meal on the table. I have learned many tricks over the years using those Leftovers which accumulate in your refrigerator by turning them into very tasty, healthy, presentable meals.
When raising my family, my husband and children were very athletic. I tried to make the meals I prepared for them healthy, but unfortunately I left out the ingredients that made dishes tasty. The recipes in my book are healthy, but they are tasty and very easy. I don’t have a professional degree as a chef, my mother and grandmother taught me most everything I know. But one thing I will always remember from my grandmother, don’t ever throw anything out, you can always use it! I live in Napa, CA where I have such wonderful access to fresh foods, seafood’s and produce. Across the country, markets are becoming very aware of the importance of fresh foods, so you should be able to find them in your favorite market.
This is a quote from a cookbook I purchased in Italy a few years ago: “Yesterday’s Leftovers taste better today”. In other words, the simplest ingredients have been transformed into delicious meals.
HEALTHY BURRITOS WITH LEFTOVER CHICKEN
This dish literally takes minutes to put together. However, if you find you have it already to assemble and no one to eat it for awhile; heat the oven to 200 degrees, spray or grease a casserole dish to fit the six burritos, put them together, place in the prepared pan, top with salsa and cheese, cover with foil and put them in the oven till your family or quests arrive. Remove from the oven, place on serving plates, top with sour cream and serve!
1 small yellow onion, chopped 2 garlic cloves, minced
2 tablespoons olive oil
2 cups Leftover cooked chicken breasts, cut into 2 inch strips
1 12-ounce can black beans, drained and rinsed
1 ½ cups mild salsa
½ teaspoon chili powder
6 8-inch tortillas, flour or whole wheat
