CAMPER’S QUICK CHILI
1 ½ lbs. ground beef 4
c cooked kidney
beans
½ c chopped onion or 2 tbsp. chili
powder to taste
onion flakes salt
1 ½ c canned tomatoes pepper
Brown ground beef in skillet along with onions and 1 tbsp. and 1 chili powder. This brings out the flavor of the chili powder. Add tomatoes and beans, season to taste, adding more chili powder if desired. Cover and simmer slowly for 1 hour. Serve with celery sticks and green pepper strips.
WILD DUCK CASSEROLE

ducks, cleaned and disjointed 1 garlic clove, chopped
2 onions, chopped ¼ tsp. black pepper
½ green pepper, chopped ½ tsp. dry ginger
1 can consommé or ¼ can ¼ tsp. nutmeg
consommé added to ½ c grape wine ¼
tsp. salt
Rinse the ducks well in lightly
salted water. Dry
well. Dredge in flour. Brown in hot fat. Brown onion and green
pepper. Place duck in
casserole. Add small garlic clove,
consommé. Season with ginger, nutmeg,
salt an pepper.
Simmer in slow over, 300 degrees for 2 hours. Serve immediately, if desired. This casserole is better cooled, refrigerated
and reheated the next day. Thicken the
gravy if desired. This recipe can be
used for mallards, pintails or canvasbacks.
