TOMATO LENTIL SOUP
4 T. butter
2 c. chopped onions
2 c. chopped celery
2 cans (35 oz. ea.) Italian plum tomatoes
6 c. broth
½ c. dried lentils
1 c. chopped fresh parsley
½ c. dry red wine
4 cloves garlic finely minced
½ t. freshly ground black
pepper
¼ t. ground cloves
1 bay leaf
Melt butter in large pot. Add
onions and celery. Cook over medium
heat, stirring until vegetables are wilted.
Puree the tomatoes with their juice in a blender and add to the wilted
vegetables.
Add the broth and lentils and bring to a boil. Reduce heat to low and simmer, uncovered,
stirring for about 20 minutes.
Add ½ c. of the parsley, along with the wine, garlic, pepper, salt and
cloves. Stir well. Simmer for about 30 minutes.
Add the remaining parsley and simmer another 5 minutes.
Stop crying!
