SMOKED SALMON WITH PAPAYA AND PEANUT SAUCE

Serves 4-6

1/4 pound of smoked salmon, sliced thin
2 cloves garlic, minced
2 tablespoons ginger, fresh (very finely chopped)
1/2 red onion, minced
1 teaspoon jalapeno (minced and deseeded)
1 tablespoon soy sauce
2 teaspoons sesame seed oil
4 tablespoons cilantro, chopped
1 teaspoon lime peels, minced
1/2 tablespoon lime juice
4 tablespoons peanuts, minced
1 teaspoon sugar
3 tablespoons coconut milk
1 tablespoon canola oil
1/4 papaya (peeled and deseeded) cut into thin slices

Method:

• Place skillet on high heat
• Add canola oil, when oil is hot, add ginger, red onion and jalapenos and sauté for 5 minutes
• Add garlic and peanuts and turn stove to medium and sauté for about 5 minutes
• Turn stove to low and add lime juice, coconut milk, sugar, lime peel, sesame seed oil, and soy sauce and let simmer for 10-15 minutes

Put a piece of salmon on papaya and add some peanut sauce and enjoy!

I thought about this recipe as I was making the last one. I wanted to make a cream sauce that would accompany a smoked salmon sandwich.

SMOKED SALMON WITH OVEN DRIED TOMATOES AND LEMON CREAM SAUCE

Serves 4

1 clove garlic, minced
3 tablespoons lemon grass, minced
3 tablespoons lemon peel
1-1/2 tablespoons olive oil
1/2 teaspoon lemon juice
1 tablespoon thyme fresh
1-1/2 teaspoons kosher salt
3/4 teaspoon black pepper
1 tablespoon cream cheese
1/2 pint heavy cream
1/4 pound smoked salmon, sliced
2 tomatoes sliced, oven dried
1/2 teaspoon corn starch
1/2 teaspoon water

Lemon Cream Sauce

Method:

• Sauté garlic, lemon peel, lemon grass and thyme along with 1/2 of the salt and pepper in olive oil
• After 3 minutes add cream cheese and heavy cream, and the rest of salt and pepper and simmer for 5 minutes
• Then blend ingredients, then return to stove to simmer for 2 minutes, add lemon juice
• Thicken with cornstarch and water

Method for oven dried tomatoes:

• Cut tomato slices in quarters, place tomatoes on a sheet pan drizzle a little olive oil over tomatoes to prevent from sticking in oven and roast for about 15 minutes in oven at 350 degrees
• Slice smoked salmon thin
• Put a piece of salmon and a piece of tomato, use toasted French bread slices, and place a little sauce on top.

SMOKED SALMON SPINACH DIP

Serves party of 8-10

3 cups raw spinach (make sure you clean spinach thoroughly)
1 cup finely chopped salmon
1 pint mayonnaise
3 tablespoons capers
1/2 teaspoon black pepper
1/4 teaspoon garlic
2 tablespoons onion powder
2 teaspoons kosher salt
2 tablespoons onion powder

Method:

• Boil spinach (should measure about 1/4 cup when cooked)
• Chop spinach and combine the rest of the ingredients in a bowl
• Let chill for 1 hour in refrigerator

Note: Goes great with crackers
