Dedication

Peggy Love Mitchell Anderson, is my real name, but over the years, my husband, Vic, has just called me "Peggy Love". In our fifty years together, Vic has been my strength, my love, and my best friend. So, it is to him that I affectionately dedicate this book. (Plus, he loves my cooking)

Introduction

Welcome to our family cookbook. Let me introduce you to my family: I have two handsome sons, Victor and Mitch, and two lovely daughters, Donna and Carol, and of course my faithful husband of fifty years, Vic.

In July of the year 2000, we celebrated our 50^th Wedding Anniversary. We found the "recipe" for sharing and caring! I hope you are so blessed.

Added to this, is daughter-in-law Linda, and son-in-laws Paul and Mark H. Also as you might expect I have been blessed with six fantastic grandchildren: Tori, Karen, Justin, Ashley, Victor IV (orV4), and my newest joys, Michael, Kaleb, and Gage.

I want to thank all of my family for help in completing this cookbook, with a special thanks to my son-in-law Paul, for putting this all together.

My family is very important to me and in this book you will see their names included many times. Over the years I have collected many excellent recipes and had adventures you would not believe.

I'd like to share not only my recipes with you, but also many of our family stories. Hopefully, the combination will make this cookbook a little different than most. As your food is bubbling on the stove, you can read about our life and maybe add a smile to your day.

I’ve also included a "Mind Snacks" section on most pages. People often like to snack while they cook. You won’t gain weight with these "mind snacks". Well, let's get to it...

50th Anniversary Special

In the year 2000 Vic and I celebrated our 50^th Wedding anniversary. Our family informed us that they had something special planned for us. They asked us to reserve a week in July and told us we’d get more specific details later.

Well as promised, as we approached the week in July we got instructions on what to pack and were told we would be delivered to the airport (destination unknown).

As scheduled, when the week arrived, a friend of the family delivered us to LAX and placed tickets in our hands to Aruba! As we checked in with the ticket Agent I couldn’t help sharing that we were going to Aruba as a gift from our family for our 50’th Anniversary. She said, "Oh that’s wonderful. What a coincidence. We’ve had a whole bunch of Anderson’s flying to Aruba today".

Vic and I looked at each other and then back to the ticket Agent. She slowly turned red as she realized she had spoken out of turn and may have shared a bit too much information.

When we arrived in Aruba we were met at the airport by a nice lady carrying a sign with our names on it. She drove us across Aruba and up the beach and pulled into a beautiful home located right on the beach.

As we walked up to the house our entire family poured out of the house, surrounding us, showering us with hugs and kisses. What a wonderful feeling and how precious family is.

The house was located on the beach at a prime snorkeling location and had a walled area in back with a huge pool, Jacuzzi, gazebo, etc.

We had a very memorably week. We went snorkeling, scuba diving, hang-gliding, went on a Submarine, rented Jeeps and drove all over the Island, and spent evening after evening watching the sun go down over the ocean.

When you are young, you spend so much time nurturing and giving of yourself to your family. If you are lucky, some day your family "gives" back to you. We have been very lucky!
