About the Book

This book is about independent restaurants that feature organic food on their menus in metropolitan cities in the United States. The authors hope that the current book has encapsulated a timely scholarly analysis that sheds an important light on some of the chief factors that impinge upon the successes and failures of these niched restaurants in the conduct of their operations. Readers should note that in writing this book, our working assumption hinged upon the notion that public policy makers should seek to expand the demand and supply of organic foods to benefit all segments of society, especially those who live in what some called “food deserts” across metropolitan centers in the United States. In pursuing our crucial analytic objectives, we ensured that the various chapters of the book dwelled essentially on the ethical, managerial and microeconomic factors (menu categories, average cost, revenue, risk-taking, profit etc.) that affected leadership and organizational goals in the context of the independent restaurants that were sampled in the study, whose findings are reported in this book.


About the Author

Dr. Nina M. Moore obtained her BA degree in business administration from DeVry University in Chicago, IL (2000-03). Dr. Moore upon completing her undergraduate degree entered a career in law enforcement, where she currently serves in the Chicago area (2003-current). While serving as law enforcement officer, she continued her education at St. Xavier University in Chicago, IL, where shed obtained an MA in Business Administration (2006-08). Dr. Moore completed her Doctorate in Business Administration (DBA) at Argosy University in Chicago, IL (2009-16). Dr. Moore has also served as project manager, which involved leading a team of community stakeholders in the context of community policing and public safety in Chicago. Dr. Tarnue Johnson obtained an MA in Political Economy from Middlesex University in London, UK (1992-94). Dr. Johnson completed a Postgraduate Certificate in Adult Education at the Institute of Education, University College London (1995-96). He spent a year doing postgraduate studies in Educational Research, Policy and Planning at the University of Manchester in Manchester, UK (1997-98). Dr. Johnson completed his Doctorate in Business Administration (DBA) at Argosy University with concentration in management (2007-11). He also completed Postdoctoral Studies in Public Policy at Northwestern University (2015). Dr. Johnson has authored and co-authored eleven books including the current publication with leading American and African scholars and intellectuals. He has also written and published several peer-reviewed articles in reputable journals. Dr. Johnson has served as Senior Lecturer in business and economics at Kendall College in Chicago, Doctoral Advisor at Argosy University and Associate Vice President for Academic Support Services at Tubman University in Liberia. He was recently appointed as Head of the Graduate School of Professional Studies at Cuttington University in Liberia.
