Cholesterol is the miracle lubricant produced by your liver that allows your blood to travel around your body a distance equivalent to twice around the world every 20 seconds.
When you cook the cholesterol (or any other oils), the paired electrons split apart. The resulting transfer of an electron creates a jagged edge on the molecule that scrapes along the walls of your veins and arteries. This is called a FREE RADICAL.
The body repairs this damage, along with the damage done by white sugar and white flour, with cholesterol produced by the liver. But remember, while consumption of a raw oil cannot harm your heart,[i] either the consumption of an adulterated oil (e.g. hydrogenated, rancid), a cooked oil or a starch cooked in oil produces an imperfect patch and it is this imperfect patch that eventually occludes the veins, and leads to:
· arteriosclerosis (hardening of narrowing of the veins)
· atherosclerosis (fatty deposits)
· thrombosis (blood clots)
· aneurisms (vein rupture).
